Plant Futurist Feature: Nikita Gounder

Meet Nikita Gounder, a passionate Microbial Biology graduate from
UC Berkeley.

Driven by a keen interest in food science, Nikita joined the Plant Futures Challenge Lab with a vision to contribute to groundbreaking innovations in the food industry.

What led you to want to join the Plant Futures Challenge Lab?

I hope to pursue a career in food science and participate in the innovations that transform the food industry. I believed the Plant Futures Challenge Lab would provide the necessary understanding, foundation, and first-hand experience to help me venture out into this field.

What are you most excited about for this course and experience?

I looked forward to hands-on learning with multidisciplinary teams and professional clients that would teach me beyond the scientific basics. I was excited to collaborate with students from different academic backgrounds and find ways to support a client through consulting work, something I have not yet experienced. It’s also an opportunity to enhance my problem-solving abilities, communication skills, and adaptability while navigating through complex, real-world scenarios.

What does the future food system of your dreams look like?

The future food system of my dreams is sustainable, environmentally friendly, delicious, nourishing, and equally accessible to everyone. This system would ensure flavorful food is available without compromising the planet's resources. This means supporting local farms and small-scale producers while also improving technological innovations that allow us to support our growing population and create a sustainable future.

What is your favorite plant-based food or meal?

My favorite plant-based meal is my mom’s Dosa (crispy fermented rice crepes) with savory mint chutney and lentil sambar. It’s a perfectly balanced breakfast or dinner that leaves you full and satisfied.
